Spaghetti Squash with Bolognese Recipe

Spaghetti Squash with Bolognese

Ingredients

  • 2 each Spaghetti squash medium-sized
  • TT Fresh basil optional
  • 2-3 T Olive oil
  • TT Salt & pepper
  • 1 each Bolognese Recipe
  • Parmesan Crisp garnish optional

Instructions

  • Preheat oven to 350 degrees.
  • Prepare the squash – cut of the ends. Place on cutting board with one of the ends facing upward, insert the tip of the knife in the middle of the top, pull knife down until you’ve cut the squash in half.
  • Repeat on the other side until you have 2 halves. Repeat for the second squash.
  • Using a large spoon, scoop out the seeds from the middle and discard.
  • Place the halves skin-side up on a sheet pan. Pour ½-1 C. water in pan (this will help steam it and cook more quickly).
  • Bake for about 20-25 minutes until tender.
  • While the squash is in the oven prepare the bolognese sauce.
  • Test the squash to see if it’s done: a fork should easily be inserted. If not, cook for an additional 5-10 minutes
  • Remove from oven and after it’s cooled and easy to handle, use a fork to scrape the inside of the squash “noodles”. Discard the skin
  • Season the noodles with Italian herbs, 2-3 T. olive oil and salt and pepper. Mix it up.

Ingredients

  • 2 pounds Ground Beef
  • 1/2 each Onion diced
  • 5-6 each Garlic cloves minced
  • Italian herbs To Taste
  • 24 ounces Tomato sauce
  • 5-6 each Garlic cloves minced
  • 1 T Balsamic Vinegar optional

Instructions

  • In a medium-large saute pan, heat 1-2 T. oil on medium high heat.
  • Season the beef generously with salt & pepper. When the pan is hot, sear the beef.
  • While the beef is searing, chop the onion & garlic.
  • When beef is browned on both sides, remove from pan.
  • Add 1 T. oil to the same pan and saute the onion until light brown.
  • Add the garlic and cook 2-3 minutes more, be careful not to burn
  • Deglaze the pan with balsamic vinegar
  • Quickly add the tomato sauce, add the beef back, add italian herbs and season again with salt and pepper
  • Using a spatula, break up the beef. Bring up to a simmer and cook for 15-20 minutes.

Ingredients

  • 1 cup Parmesan shredded

Instructions

  • Heat oven to 350 degrees
  • Place mat on a sheet pan
  • Arrange a thin layer of parmesan in a circle or your desired shape
  • Repeat until the mat is full, make sure to space them out so the don’t touch each other
  • Bake for 10-15 minutes or until golden brown.
  • Let cool on the pan, then remove and use as a garnish or snack!
