Banana Peanut Butter Muffins (NO Added Sugar, Gluten-free, Dairy-free, Baby-friendly)

1 Large mixing bowl
1 potato masher or fork
Ingredients

Bananas, ripe

Cup
Oats
1/2
Cup
Peanut butter
Or preferred nut butter

eggs
1/2
tsp
baking soda
1/2
tsp
vanilla extract
optional
1/2
tsp
cinnamon
optional
1/2
Cup
Blueberries or preferred fruit
optional
Instructions
Preheat oven to 350 degrees
Add bananas to mixing bowl and mash well with the potato masher or a fork
Add peanut butter to bananas and mix well
Add eggs and vanilla and mix well
Add in oats, baking soda, cinnamon and blueberries and mix until combined
Line muffin pan with liners or grease with oil
Scoop muffin batter into muffin pan filling each one about 3/4 the way full
Bake in oven for 12-15 minutes. Do not over bake.
Cool and store in an air tight container.

Notes
Store in air tight container on counter for 2-3 days. Place in fridge to keep longer.
Instead of blueberries, try your favorite fruit or chocolate chips. I've tried dried pineapple and it turned out great!
Babies LOVE these muffins and they're great for a quick and easy breakfast or snack.
