Banana Peanut Butter Muffins (NO Added Sugar, Gluten-free, Dairy-free, Baby-friendly)

Special Equipment

  • 1 Muffin pan
  • 1 Large mixing bowl
  • 1 potato masher or fork

Ingredients

  • 3 each Bananas, ripe
  • 1 Cup Oats
  • 1/2 Cup Peanut butter Or preferred nut butter
  • 2 each eggs
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract optional
  • 1/2 tsp cinnamon optional
  • 1/2 Cup Blueberries or preferred fruit optional

Instructions

  • Preheat oven to 350 degrees
  • Add bananas to mixing bowl and mash well with the potato masher or a fork
  • Add peanut butter to bananas and mix well
  • Add eggs and vanilla and mix well
  • Add in oats, baking soda, cinnamon and blueberries and mix until combined
  • Line muffin pan with liners or grease with oil
  • Scoop muffin batter into muffin pan filling each one about 3/4 the way full
  • Bake in oven for 12-15 minutes. Do not over bake.
  • Cool and store in an air tight container.

Notes

  • Store in air tight container on counter for 2-3 days. Place in fridge to keep longer.
  • Instead of blueberries, try your favorite fruit or chocolate chips. I've tried dried pineapple and it turned out great!
  • Babies LOVE these muffins and they're great for a quick and easy breakfast or snack.
