Ingredients
1 Pound Fresh Green beansends trimmed off
2-3 Tbsp.Extra Virgin Olive oil
½ EachOnion small diced
2-3 EachGarlic clovesminced
1 Tbsp.Dried Oregano or Italian herbs
1-15 ounce can Fire roasted tomatoes or Tomato sauce
To TasteSalt & pepper
Instructions
On the stove top, heat a medium-sized saute pan on medium heat and add oil.
Saute the onions lightly until translucent, about 2-3 minutes. Add the garlic and saute another 2 minutes being careful not to burn it.
Add the green beans, tomato, oregano, salt, pepper and 1/2 cup of water to the pan and give it a good toss.
Bring it up to a boil, then turn down to a simmer and add a lid on top. Cook for about 18-20 minutes.
Carefully test a green bean to see if desired doneness is reached. If they are still too crunchy, continue to cook for another few minutes until desired doneness is reached.
Taste a green bean and add more seasoning if needed.
Enjoy right away or store in the fridge for up to a week.
