In a medium-large saute pan, heat 1-2 T. oil on medium high heat.
Season the beef generously with salt & pepper. When the pan is hot, sear the beef.
While the beef is searing, chop the onion & garlic.
When beef is browned on both sides, remove from pan.
Add 1 T. oil to the same pan and saute the onion until light brown.
Add the garlic and cook 2-3 minutes more, be careful not to burn
Deglaze the pan with balsamic vinegar
Quickly add the tomato sauce, add the beef back, add italian herbs and season again with salt and pepper
Using a spatula, break up the beef. Bring up to a simmer and cook for 15-20 minutes.
